Work Location: All campus buildings where Dining Services operates or has catered events. Job location and schedule may change when Colleges is not in session (ex. summer & breaks).

About the Position

The Catering Sous Chef assists the Catering Chef Manager in the overall managing of the Catering / Bakery department.This position assists and supervises the daily output of catering menus and bakery products, and monitors product quality and consistency from the Board Plan menu.The Catering Sous Chef also assists in overseeing and directing catering staff as well as student employees. This position requires working early morning hours, evening hours, weekends, and holidays, as needed.

Primary Responsibilities
  • Assist in directing staff within established operational procedures
  • Assist the Catering Chef Manager in all aspects of the Catering/Bakery department
  • Oversight of all food production to ensure superior quality and safe food handling practices
  • Oversee and manage the production of all menu items and ensures they are properly rotated
  • Assist in enforcing compliance with health, safety, and sanitation standards as directed by federal, state and local health department regulations, Serv-Safe, College, and departmentally developed standards
  • Assist in managing and controlling food costs and offers solutions when necessary
Line of Report: The Catering Sous Chef reports to the Catering Chef Manager & Executive Chef.

Minimum Qualifications
  • 5 years' food service supervisory experience, including basic cooking in commercial and/or institutional food service operation
  • Serve Safe Certification or ability to obtain certification at the colleges expense within 3 months
  • Aller-train Certification or ability to obtain certification at the colleges expense within 3 months
Preferred Qualifications
  • Culinary degree
  • Work experience in a higher education environment

Special Requirements
  • Ability to obtain and maintain PA Act 12 background checks
